Now that the sunshine is finally here, I’m all about eating light, fresh and seasonal meals and keeping my energy up.
This summery Berry Salad is the perfect dish to serve up when the sun is scorching and you don’t want anything too heavy.
It is refreshing and full of flavour, thanks to the delicious, juicy berries and a lime, basil and mint dressing.
This summery dish is made in collaboration with my friends at Solgar, who make the most incredible and effective supplements. Here, I used their Methylcobalamin supplement, which is perfect for any fellow vegans because it helps to boost vitamin B12 levels. Great for giving me the energy I need to power through the day!

Summer Berry Salad
- Serves 2
- Four handfuls spinach
- One avocado, pitted and sliced
- 2 cups berries of choice, sliced
- 2 tbsp chopped, roasted almonds
- Few sprigs mint and basil, finely chopped
- For the dressing –
- Two handfuls mint and basil, finely chopped
- 5 tbsp filtered water
- 1 tbsp olive oil
- 2 tbsp maple syrup (or more, to taste)
- Juice one to two limes (to taste)
- Zest one lime
Start by making your dressing. Place together all ingredients into a blender and blitz smooth. Taste and adjust the sweetness, if needed.
Make your salad by stirring together all ingredients until Combined. Drizzle over the dressing and toss well to combine. Serve immediately.
