Strawberry & Beetroot Smoothie Bowls

What’s your favourite breakfast?

Most days, I have some sort of smoothie or chia pudding for breakfast. I’m never normally that hungry in the morning, so I tend to refuel with smoothies that are packed with carbs, protein and healthy fats.

Sometimes I’ll be in the mood for a green smoothie (these are not usually for the faint-hearted and are often 100% veggie based!), other times I want colour and will go for blueberries, or this Strawberry & Beetroot Smoothie Bowl.

In fact, in recent weeks – ever since the ripe, ruby red strawberries started showing up on supermarket shelves, in fact! – I have had this strawberry and beetroot smoothie combo at least a few times a week.

The beetroot adds a delicious earthiness to the juicy, sweet strawberries, without overpowering or masking their taste, and it creates such a beautiful colour too! So beautiful that even our new kitten, Mo, couldn’t resist taking a peek…

After all, who could fail to smile when enjoying a hot pink smoothie first thing on a gloomy Monday morning…?

At the moment, beetroot is one of my favourite ingredients for shakes and smoothies, especially before a workout. They are such an incredibly versatile root veggie, yet they’re so good for you too!

Health benefits of beetroot include the fact that they contain iron and folate, as well as the nature’s very own calmer and soother, magnesium. Beets are also full of antioxidants and are thought to lower blood pressure, cleanse and detoxify the blood and even give athletes a super-powered energy boost!

Combine this with avocados for their healthy fats (wonderful for skin, hair, brain and also hormones!) and all those amazing vitamins and anti-oxidants from the strawberries, and you’re onto a winner!
