Regular readers will know that, out of all festive foods and flavours, gingerbread is my absolute favourite.
In fact, if I had it my way, I’d have gingerbread EVERYTHING all year round. I love it that much!
Not only does it pack a powerful punch when it comes to flavour, but adding spices such as cinnamon and ginger to foods is a great way of upping nutrients and health benefits, too!

Anyway, this simple, cosy bowl of Gingerbread Overnight Oats is perfect for those breakfasts on-the-go – you know the ones, where you’re dashing frantically around and have no time to yourself!

Simply make these the night before, and you’re good to go. I promise!

Although I didn’t have them to hand for this shot, they taste particularly delicious topped with caramelised apples (yum). But feel free to use whatever you have to hand!

Gingerbread Overnight Oats
Ingredients:
- Serves 4
- 2 cups oats
- 2 cups milk – I used coconut milk
- 4 tbsp coconut yoghurt
- 1-2 tbsp molasses (to taste)
- 1-2 tbsp maple syrup (to taste)
- 1 tsp vanilla extract
- 1-2 tsp cinnamon (to taste)
- 1-2 tsp ginger (to taste)
- Pinch nutmeg
- Pinch cloves
- Pinch salt
- Caramelised apples and pecans, to top (optional but recommended)
Method

Whisk all ingredients together in a bowl. Place in the fridge overnight to thicken and soften – add more milk the next morning, if desired! Serve with toppings of choice.
