While I don’t enjoy a low carb diet by any means (I love carbs – especially sweet potato! – way too much for this), I find that I tend to do better when I start my day with a high protein, high fat breakfast.
This Easy Vegan Grain-Free Porridge is low-carb, packed with protein, but also creamy, cosy and comforting – all the things you want from a traditional bowl of oats!
It’s also simple to whip together, takes little to no prep, and is guaranteed to give you your morning rocket fuel, right through until lunchtime!
Of course, you can add sweetener if you like to this grain-free oats recipe. However, I like to add my sweetness and flavour with ground spices instead (think cinnamon, ginger and cardamom), which also packs in nutrients.
However you choose to serve these, I hope you enjoy these bowls every last bit as much as I do!
Easy Vegan Grain-Free Porridge
- Serves 2
- 4 tbsp ground almonds
- 4 tbsp coconut flour
- 2 tbsp ground flax
- 4 tbsp protein powder of choice (I used vanilla) or collagen for non-vegan
- 1.5-2 cups cashew or coconut milk
- 1/2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4-1/2 tsp ground ginger
- Pinch ground cardamom
- Pinch salt
In a saucepan, whisk together all ingredients until well combined. Heat (on a low to medium flame) until warmed through and starting to thicken. Add splashes of more milk, if desired.
- Sweeten, if desired (I omit and use the spices for flavour), then serve warm in bowls with toppings, such as fresh fruit, berries and chopped nuts.
