Easy, Speedy Avocado Hummus

It’s no secret that I love avocados.

My love runs so deep that I’ll add them to pretty much anything – smoothies, brownies, mousses, salads, sauces and salads. You name it, and I’ll happily add an avocado to it!

Yet, however much I like to mix things up, I’ll always love avocado on toast pretty much more than any food on the planet. What can be better than bakery-fresh, toasted sourdough with creamy avocado?

If you’re a fellow avocado on toast lover, then you’ll adore this Easy, Speedy Avocado Hummus. It’s so simple to make, yet packs in some protein alongside those healthy fats, thanks to the chickpeas. It also tastes delicious, and makes for the perfect afternoon snack – great for keeping you away from the biscuit tin!

Easy, Speedy Avocado Hummus

Ingredients:

  • 1 can chickpeas, washed and drained (reserve 5 tbsp aquafaba – the chickpea brine)
  • 2 ripe, pitted avocados
  • 1 garlic clove, minced
  • 3 tbsp olive oil
  • 2 tbsp tahini
  • Juice 1 lemon
  • 1/2 tsp cumin
  • Salt and pepper

Method:

  1. Blend together the tahini and lemon until creamy. Add in the remaining ingredients and blend once more until smooth, adding splashes of aquafaba to help the mixture come together if needed – add one tablespoon at a time until you achieve your desired consistency! Season with salt and pepper, to taste, and ta-da, you’re done! Store in an airtight container for up to a week, and serve on toast, pitta, or use as a dip for raw veggies.
