I wasn’t sure whether or not to include the recipe for this orange cashew cream because it’s not, strictly speaking, a recipe in its own right.
However, it is one of my favourite things ever, and lifts any number of desserts, puddings and breakfasts. Hell, I even eat it from the bowl! Therefore, I decided that it had to be included…
Vegan Orange Cashew Cream
- 1 cup cashews, soaked 4-6 hours
- Juice 1.5 oranges
- Zest of 1/2 orange
- 1 tbsp maple syrup
- 1 tbsp Sukrin icing sugar
- Blend the ingredients until totally smooth (this took around 4 minutes in my Vitamix, it may take longer in a less powerful blender). Spread over cooled brownies, or spoon over breakfasts and cookies and enjoy!
