When I was younger, I was never a big fan of the colour pink. I was a tomboy, into trains, cars and rough n tumble. I liked to climb trees, play with the boys and lived in my trainers. Ballet, dolls and pink simply weren’t my thing.
However, as I’ve grown older, a girlier, softer side has started to come out. In fact, now that I’m 30, I love anything pretty, anything delicate, and anything pink. Candyfloss, barbie, baby, neon…all the shades of pink now my head, and I can’t resist creating pink foods.
And, since I now have Zayn (my four-year-old, whose favourite colour is pink. In a BIG way.), I’m even more drawn towards it.
Anyway, as we approached his fourth birthday a few weeks ago, I started to create a lot of pink foods in his honour. So when I heard of beetroot lattes, you can imagine my joy! A PINK hot drink!
While it may sound odd, I promise you that this Red Velvet Beetroot Latte tastes anything but. In fact, it doesn’t even taste of beetroot at all – more a delicious, creamy hot chocolate / coffee hybrid. And what’s not to love about that?
I love using beetroot wherever I can in recipes since it’s one of those wondrous foods which actually deserve the mantle of “superfood”. High in vitamin C, fibre, folic acid, inflammation-fighting nutrients and energy-boosters, it can even help the body to detox, thanks to special pigments called betalin.
The perfect drink for snuggling up on the sofa with as the Autumn draws in, and blankets and comfort food look ever more tempting…Enjoy!
Red Velvet Beetroot Latte
- Gently heat the coconut milk until hot, then place in a blender until frothy. Pour into a mug and set aside.
- Blend together the cacao, coconut sugar, beetroot juice, coconut cream, vanilla and optional Love potion until smooth. Add in the coffee, if using.
- Pour the red velvet mix into a separate mug, then slowly pour over the coconut milk, stirring well to combine. Top with whipped coconut cream, then drizzle over a touch of beet juice to decorate, if desired.
