Lemon Coconut Bounty Bites

All too often, friends can never believe it when I refuse chocolate desserts or puddings.

When passed a desserts menu or wandering past rainbows of tempting cakes in a patisserie, I will always refuse the chocolatey option. It’s definitely odd, given that I love chocolate, and my favourite thing to create is homemade chocolate bars.

Yet, there’s just something to be said for light, fruity puddings.

For years, my favourite pudding was Lemon Meringue Pie (still working on a recipe for this one, you guys!). Every Sunday, I would beg my mum to make me her lemon meringue and, ever since, zesty, citrusy desserts have always been my go-to.

Anyway, perhaps because of this, lemon and coconut remains one of my top flavour combos. For me, it’s like happiness or sunshine in food – summery, mouth-wateringly delicious!

I’ve been working on the recipe for these Lemon Coconut Bounty Bites for a while now, and I finally think I’ve cracked it! These are full of flavour, and so light and lemony.

To me, the perfect twist on the classic bounty bar.

Created using vegan-friendly ingredients and almost raw (make the chocolate from scratch to keep it raw-friendly!), these little bites may be a little messy to create, but they are simple, wholesome and taste like heaven.

They’re also formed using store cupboard ingredients so, chances are, you can make these without even having to hit the supermarket. What could be better?

Plus, they are toddler-approved and baby-approved, too. And that must mean that they are a winner, surely…?

Lemon Coconut Bounty Bites

Ingredients:

  • Makes 15-20 balls
  • 2 cups desiccated coconut
  • 3/4 cup coconut cream
  • 1/4 cup maple syrup
  • 1/4 cup Lucy Bee coconut oil, softened
  • Zest one lemon
  • Juice 1-2 lemons
  • Drop lemon extract
  • Pinch Lucy Bee turmeric, to colour (optional)
  • To coat –
  • 150g chocolate (I used Supertreats – use dairy-free for vegan) melted with one tsp coconut oil

Method:

  1. Start by blitzing half of your coconut in a blender, scraping down the sides, until it starts to stick together (around one minute in my Vitamix). Pour it into a bowl, and add the remaining ingredients.
  2. Stir together with a spoon, then use your hands to mix the ingredients together. Taste and adjust the flavours as desired (I like using a LOT of lemon!). Shape into balls, adding a little more coconut if the mixture is feeling a little sticky, or even placing in the fridge to firm up a little first.
  3. Place the balls on a baking sheet, then leave in the fridge overnight to firm.
  4. Once ready to eat, prepare your chocolate, then coat each ball in the chocolate and enjoy!
