This year, I’ve decided I want to spend more time focused on the blog. It can be so difficult carving time into my schedule, between kids and work and life, just for blogging. Yet, it’s one of the parts of my job which I enjoy the most!

Another thing I’ve decided I want to bring you more of this year is everyday, simple recipes. You know, the kinds of foods you eat day in, day out, –  the ones which become staples in your house.

This Instant Bircher Muesli is one of those recipes for us.

It is super simple to put together, brilliant for kids (especially on those busy, manic school mornings) and full of store cupboard staples. It’s also filling, comforting, delicious and creamy – and created in just seconds!

You can also mix it up according to whatever you have lying around, add whatever toppings you want, and pretty much create your own bowl.

I guarantee it will become a staple in your household, too!

Instant Bircher Muesli

  • Serves 2 –
  • 1 cup oats, lightly ground (not ground to a powder – just enough that they are smaller and finer!)
  • 1 apple, grated
  • 2 tbsp desiccated coconut
  • 1 tbsp chia seeds
  • Two small handfuls raisins (optional)
  • 1/2 cup + 1 tbsp plant-based milk of choice (sometimes I like to sub for some freshly-squeezed OJ!)
  • 4 tbsp coconut yoghurt
  • 1 tsp vanilla extract
  • 1/4-1/2 tsp cinnamon (to taste)


  1. In a large mixing bowl, stir together all ingredients until well combined. Allow to stand for a few minutes, or until creamy and thick. Serve immediately in bowls, with toppings of choice, or stir in the fridge until ready to serve.
