Now that we are creeping ever closer to February, I am more excited than ever for spring! Who’s with me?

Over the last few weeks, I’ve grown tired of the cold, the rain, the dreary grey skies. I long for colour, for sunshine and warmth, for longer days and for beautiful spring blooms! Yet, above all else, I am sick of these endless winter bugs!

Almost every week, someone in our house has some kind of sniffle or snuffle. A sore throat here, a runny nose there. A wracking, chesty cough. Or an upset tum or sickness bug. Is it just me or has winter gone on FOREVER?!

Anyway, if you need a spring in your step, then here is the ultimate winter warrior. Today, I am bringing a little bit of spring sunshine your way with this gorgeous, sunny immune-boosting smoothie bowl!

Made with tropical flavours and fruits, including mango, pineapple and lime, which are blended with coconut milk, it’s a summer holiday in a bowl!

Each of the ingredients also packs a powerful punch when it comes to immune boosting. Especially when pared with one of my favourite health supplements around, Unbeelievable Bee Prepared Max Strength Immune Formula.

Immune-Boosting Pineapple & Mango Smoothie Bowl

Ingredients:

  • Serves 1-2
  • 1 1/4 cups coconut milk
  • 2 cups frozen mango
  • 1 cup pineapple
  • 1/2 small cauliflower, broken into florets (optional, but adds hidden veggies and creaminess!)
  • 1 inch chunk ginger, peeled and minced
  • Juice 1/2 – 1 lime
  • 1/4-1 tsp turmeric, ideally fresh (dependent on taste – I always add a lot!)
  • Pinch black pepper (enhances the effects of the turmeric)
  • 1 tsp brown rice syrup or raw honey (optional – I omit)
  • 2 tbsp chia seeds
  • Capsule contents of 2ย Unbeelievable Bee Prepared Max Strength Immune Formula (or Daily Defence)
  • Frozen or fresh berries, to serve
  • Method:
  1. Place the ingredients into a high-speed blender and blitz until smooth. Add more or less milk until you achieve the consistency you desire.
  2. Pour into bowls and scatter over the frozen berries. Enjoy immediately.
