Anyone who knows me will know just how much I love avocado. I would include it in every single meal if I could – and, in fact, all too often I do.
Avocado on toast is one of my favourite meals, and I adore it with just a sprinkling of salt, pepper and chilli flakes. However, this avocado on sourdough toast with feta and mint takes it to the next level. Avocado lovers, this is for you!
- 2 avocados, pitted and chopped
- 1 tbsp fresh mint, chopped
- Squeeze lemon juice
- 50g Feta, crumbled
- Stir together the avocado with the mint and lemon juice combined. Season to taste with Himalayan pink salt and black pepper.
- Toast your bread, then spoon over the avocado mixture. Sprinkle over the feta and enjoy.
