Avocado on sourdough with feta and mint

Anyone who knows me will know just how much I love avocado. I would include it in every single meal if I could – and, in fact, all too often I do.

Avocado on toast is one of my favourite meals, and I adore it with just a sprinkling of salt, pepper and chilli flakes. However, this avocado on sourdough toast with feta and mint takes it to the next level. Avocado lovers, this is for you!

Avocado on toast

Ingredients:

  • 2 avocados, pitted and chopped
  • 1 tbsp fresh mint, chopped
  • Squeeze lemon juice
  • 50g Feta, crumbled

Method:

  1. Stir together the avocado with the mint and lemon juice combined. Season to taste with Himalayan pink salt and black pepper.
  2. Toast your bread, then spoon over the avocado mixture. Sprinkle over the feta and enjoy.
