With the Easter holidays still here for us, mine has passed by in a blur, so Iโ€™m about to dig into to a fast, healthy, delicious meal - Fifteen Minute Flatbread Pizzas, topped with @violife_foods amazing Original Flavour vegan cheese slices ๐Ÿ˜๐Ÿ˜ I just whipped up the flatbreads (five minutes - no need for rising. Hurrah!), then topped with tomato and pepper marinara, cheese slices and baked. I then scattered over some roasted tomatoes, rocket, avocado and chilli flakes.     • Howโ€™s everyone enjoying their Easter weekend? Are you in a chocolate coma yet? ๐Ÿคช๐Ÿคช If youโ€™re not quite ready to give up allllll the chocolate (Iโ€™m not!), then letโ€™s make some Chocolate Mousse. Whoโ€™s with me? ๐Ÿ˜๐Ÿ˜ this is my easy Aquafaba Chocolate Mousse - recipe is on the blog, but Iโ€™ll pop it below for you anyway ๐Ÿ˜˜๐Ÿ’– To serve 4, you need:
1 cup aquafaba, chilled (chickpea brine)
120-150g dark chocolate, finely chopped (depending on how rich you like it - for me, the more chocolate, the better!)
2-4 tbsp maple syrup (to taste)
1 tsp vanilla paste
Sea salt, to taste

Method:
1) Gently melt your dark chocolate in a bain marie, stirring smooth. Remove from the heat, then whisk in the maple syrup (I used 3 tbsp, but it depends on your tastebuds and how dark the chocolate is!), vanilla and salt. Set aside.

2) Beat your aquafaba until stiff peaks form - this took me around ten minutes. Pour the chocolate mixture in around the sides (this helps to prevent the air from being knocked out), then beat once more to combine. Pour into cups or ramekins and place in the fridge overnight to firm up. Serve with fresh fruits, coconut cream and a sprinkling of extra sea salt!

    • Whoโ€™s joining me for some chocolate tart?! ๐Ÿ˜๐Ÿซ๐Ÿ™‹๐Ÿผโ€โ™€๏ธ The perfect treat for a weekend of chocolatey celebrations over Easter ๐Ÿฐ๐Ÿฃ ๐Ÿ˜‹๐Ÿ˜‹ To be honest, I went off on a chocolate tangent with this and didnโ€™t write down how I made it. But if you want an idea of the recipe, this is roughly what I did! ๐Ÿซ VEGAN CHOCOLATE GANACHE TART ๐Ÿซ
For the base - 
1 1/2 cups ground almonds
1 cup oat flour
1/2 cup cacao 
2/3 cup cacao buttons, melted (note: since cacao buttons cannot be โ€œpackedโ€, you may need less coconut oil in place) 
5 tbsp maple syrup (or more, to taste)
Pinch salt, to taste 
1 tsp vanilla 
For the ganache -
1 cup coconut cream or oat cream
300g good quality dark chocolate, finely chopped
Pinch salt, to taste (I like adding more salt as I love salted choc!)
Maple syrup, to taste (optional - I omit)

Fresh fruits, to serve (recommended) 
Method:
1. Start by making your base. Stir together all dry ingredients, then fold in the wet ingredients until well combined. If the mixture is still a little dry, melt a few more cacao buttons (this is the part which I made up as I went along!). Press the mixture into the base of a springform tin, pressing up the sides too. Place in the fridge to firm up for a few hours.
2. Make your ganache by very gently heating the cream in a pan on a low heat until it is warm but not boiling. Remove from the hob, then add your chocolate. Cover with a clean tea towel and allow to stand for a few minutes. Stir until melted (you can apply a touch more heat - again, very gently! - to do this if needed). Add in maple syrup, to taste, and salt, if desired.
3. Pour over your tart base, then allow to firm up in the fridge. Serve topped with fresh fruits (my fave is raspberries!).     • Vegan Ferrero Rocher anyone? ๐Ÿ˜๐Ÿ˜ Since itโ€™s almost Easter, I thought Iโ€™d share these amazing chocolates! ๐Ÿฐ๐Ÿฐ Chocolate hazelnut will forever be one of my favourite combinations, and this recipe combines that classic flavour with no added sugar or nasties! ๐Ÿ˜‹๐Ÿ˜‹ I simply used my vegan truffle recipe (on the blog - but essentially just coco or oat cream with dark choc!) and stirred through some @meridianfoods hazelnut butter (think I added 2/3 cup, but I did it to taste!), along with a pinch of salt and vanilla. You can add maple syrup to sweeten if you like! ๐Ÿซ๐Ÿซ I think dunked in melted chocolate, because thereโ€™s no such thing as too much chocolate ๐Ÿคช๐Ÿคทโ€โ™€๏ธ As a side note - I thought Iโ€™d experiment with a moodier shot here. I havenโ€™t nailed it by any stretch (I find it tricky to edit darker photos and create those shadows as Iโ€™m naturally drawn to colour and light ๐Ÿคทโ€โ™€๏ธ), but it was still fun to try! I also had to ditch my perfectionist streak to share these - as youโ€™ll see, some of the chocolates have small flaws!     • Happy new week to you all! ๐Ÿ’–๐Ÿ’– We have just started our Easter holidays (cue lots of chaos and hyper children!), so if I go missing - you know Iโ€™ll be hiding in the pantry ๐Ÿคช Anyway, school holidays also mean making lots of snacks to keep the boys happy (question: do boys EVER stop eating?! ๐Ÿ˜ฑ). Iโ€™ve been making a lot of these granola bars lately. Easy, no-bake and super cheap. Plus, they are great for breakfasts on the go! If youโ€™re in holiday mode too, hereโ€™s the recipe ๐Ÿ˜˜

NO BAKE GRANOLA BARS
(Makes 12-16 bars)
3 tbsp vegan butter
3 heaped tbsp cashew butter (I used @meridianfoods) 
4.5 tbsp coconut honey - or more to taste (I used @coconutmerchant) 
1 tsp vanilla
2 cups oats, lightly toasted (I toasted in a pan)
3/4 cup desiccated coconut 
1/2 cup chopped nuts - I used pecans and almonds 
1 cup mixed dried fruit and seeds - I used cranberries, goji berries, pumpkin seeds and watermelon seeds @mightyseeds 
1 cup dark chocolate chips 
Pinch salt

Method:
1. Gently melt the butter in a pan. Whisk in the cashew butter, coconut honey (can also use maple syrup) and vanilla until smooth. Remove from the hob and set aside. 
2. In a separate bowl, mix together oats, coconut, nuts, dried fruit and seeds and salt. Stir in the butter mixture until everything is completely coated (add more honey or cashew butter, if the mixture isnโ€™t sticky enough), then fold in the choc chips. Donโ€™t worry if they melt a little - this helps everything stick together anyway!
3. In a lined brownie tin, press the mixture down tightly. The firmer you press and the more compact the mixture, the better your bars will hold! Place in the fridge to firm overnight.
4. Cut into bars and enjoy immediately, or store in a container in the fridge!
